A kissing recipe tonight. Indeed, Baci di Dama translates into “Lady’s Kisses”. It refers to the fact that a thin chocolate layer keeps together the two halves of the cookie, resemblance to two lips intent on giving a kiss.
Originally, they were made with two hazelnut biscuits sandwiches together by a thin layer of chocolate. Hazelnuts were much easier to find and cheaper than almonds, at the time these cookies were invented. However, the almond version is now much more common than the hazelnut.
I decided to substitute half of the butter used in the original recipe with some almond butter, to enhance the almond flavor. Also, you could add some orange zest in the dough, it perfectly pairs with almonds and dark chocolate.
They’re really easy to make, but they look so elegant. They have a melt-in-your-mouth-texture and are bite-sized, meaning they’re quite addictive. They’re perfect for an afternoon tea or with a coffee after dinner.

Baci di Dama
Equipment
- oven tray
Ingredients
- 100 gr Plain Flour
- 100 gr Almonds
- 50 gr Unsalted Butter
- 50 gr Almond Butter
- 100 gr Caster Sugar
- 50 gr Dark Chocolate
- as required Water
Instructions
- In a food processor, grind the almonds until really thin. Add all the ingredients (except for the dark chocolate) in a bowl and mix well until smooth. Add a tbsp of water in case the dough results too dry.
- Put in the fridge for 30 min covered with a clean cloth or cling film, to firm up.
- Preheat the oven to 180C. Take teaspoons of the dough and roll into balls. Line the baking tray with baking paper and place the little balls on top. Bake for 15/20 min.
- Remove the cookies from the oven and let it cool down. In the meantime, put the chocolate in a mug or glass with a tsp of water and melt it into the microwave.
- Take pairs of biscuits, pipe a little chocolate on to the base of one and sandwich them together.
