Fish Friday! I just love smoked fish. Have you ever tried smoked mackerel? I got to know it when I moved here, and I have to say it’s so tasty! Baked cod is amazing as well, you just need a great product and follow few tricks.
Getting to know that the fisherman van was coming in front of our place every Friday, was our lockdown gamechanger! We’re really lucky, from this point of view. We get to have the best food every Friday, freshly caught over the night.
I know fish and chips is the most famous scottish dish – maybe second to fried mars bars?- but I really find it too heavy! Also, there are so many ways you could cook cod or haddock!
This recipe is so easy, just be careful not to leave the fish in the oven for more than 15 min, otherwise it’ll overcooked and be really dry. Also, I suggest to serve it with my Crunchy Cauliflower as side. It’s the perfect pairing!

Baked Cod and Smoked Mackerel
Equipment
- oven tray
- oven
Ingredients
- 2 fillet Cod
- 1 fillet Smoked Mackerel
- 8-10 Cherry Tomatoes
- 20 grams Capers
- to Taste Salt & Pepper
- 15 gr Butter
- 1 Lemon
Instructions
- Place the fish fillets on a baking tray. Cut the tomatoes and the lemon.
- Add the tomatoes, capers, lemon slices, salt and pepper on the cod fillets. Add 10 gr of butter on the smoked mackerel and the remaining on the cod fillets.
- Bake at 200C for 15 min. Serve warm with your favourite side!
