I wasn’t supposed to post this recipe, to be honest, I made it with all the remaining from the fridge. The result, however, was so tasty and stunning I had to take a couple of pictures. And well, I had to make a post of it as well.
Autumn is such an amazing season, with so many tasty and underrated vegetable options. These burgers are an amazing way for getting your protein intake kick and all the fibers you need, too. I paired them with a beet mash, both for colour and taste. Moreover, the pomegranate gives the entire dish that bitter-sweet flavour it needs.

Cauliflower and Chickpeas Burger with Beets Mash
Equipment
- Pot with Boiling Water or Steamer
- electric blender
- sauce pan
- frying pan
Ingredients
- 250 gr Chickpeas (one can) or Beans
- 400 gr Cauliflower
- 30 gr Breadcrumbs
- to taste Salt, Pepper and Herbs
- 1 tbsp Linseeds or one egg
For the Beets Mash
- 300 gr Beets
- 200 gr Carrots
- 250 gr Potaotes
- 200 ml Milk of choice I used Cashew
- 1 tbsp Olive Oil or Vegan Butter
- to taste Salt and Pepper
Instructions
- Start from cutting up all the vegetables and cooking them, either in a steamer or in separate pots with boiling water until tender. It should take around 20-30 minutes. In the meantime, in a cup or glass, mix the linseeds with 100 ml of water and leave them to rest.
- Blend together the cauliflower, chickpeas, breadcrumbs and season. Add some more breadcrumbs in case the mixture results too moist (especially if boiling the vegetables).
- Make the burgers, coat with some extra breadcrumbs and cook at medium-high heat in a frying pan, 4-5 minutes a side, until golden.
- Prepare the mash by mashing together the cooked potatoes, beets and carrots. Add some milk, olive oil and season. Cook in a sauce pan until warm and uniform.
- Serve the burgers with the mash and some pomegranate to decorate.
