It’s time! It’s time to start baking cookies, and master the PERFECT recipe for the holiday period! I’ve never made gingerbreads myself, but I worked around this cookie recipe for a while and I think it’s just perfect for gingerbread cookies as well.
Italians love cookies for breakfast. The real issue is that we don’t like soft, moist, chewy cookies. We like to dunk our cookies into a morning coffee and eat them straight away. If they break in the coffee, you’ll know straight away you won’t have a great day.
These sturdy biscuits are all about creativity. You can just use the basic recipe and add any flavour you fancy to get a different flavour everytime. One of my favourite is cardamom, rosemary, hazelnut and cocoa. It might sound like a weird mixture of spices, but they work amazingly together.
The Cocoa Gingerbreads are quite similar to normal gingerbread, but you’ll please any cinnamon-hater as the cinnamon taste isn’t as strong. The white Chocolate Matcha cookies are just flawless. The flavour of the matcha tea powder isn’t too overwhelming and the white chocolate gives back the perfect sweetness.
If you store them in an airtight jar at room temperature, they’ll stay good for up to a week. Although I’m not really confident they’ll last longer than 10 minutes once they’re on a platter. As they last for a while, these make ideal treats to share with, friends, family, and neighbours.

Cocoa Gingerbreads and White Chocolate Matcha Cookies
Equipment
- electric blender
- kitchen robot (optional)
- oven tray
- Rolling Pin
Ingredients
Cookie dough
- 200 gr Mixed Flours any kind (Plain, Buckwheat, Brown, Spelt etc)
- 70 gr Light Butter or 50 gr Oil
- 40 gr Icing Sugar or any sugar
- 30 gr Almonds or any other dry fruit
- 1 Egg
- 8 gr Baking Powder
- 1 tsp Salt
Cinnamon Cacao Cookies
- 50 gr Whey Protein Powder (chocolate taste)
- 20 gr Cacao Powder
- 20 gr Crystallized Ginger
- to taste Cinnamon/Pumpkin Spice
White Chocolate Matcha Cookies
- 50 gr Coconut Flour
- 20 gr White Chocolate
- 2 tsp Matcha Powder
Instructions
- Grind almonds with the electric blender. Mix together the flours, the almonds, butter, eggs, sugar and baking powder and mix with a kitchen robot or by hand.
- Once everything is well mixed, add the salt and mix again. Divide the dough into half in two bowls.
Cinnamon Cacao Cookies
- Cut the ginger into small pieces and add it to one of the bowls, together with whey powder, cacao and cinnamon. Mix well to incorporate all the ingredients. If the dough results to be too dry, add a tbsp of greek yogurt or milk.
- Wrap the dough into cling film, flatten it together, then chill it in the refrigerator so it firms up (1-2 hours).
White Chocolate Matcha Cookies
- Grind the white chocolate with the electric blender and add it to the other half of the dough. Add matcha powder and coconut flour and mix well. If the dough results to be too dry, add a tbsp of greek yogurt or milk.
- Wrap the dough into cling film, flatten it together, then chill it in the refrigerator so it firms up (1-2 hours).
- Once the dough is chilled, place it on a rolling mat, sprinkle with flour and roll out with a rolling pin. Move the dough around to prevent it from sticking.
- Once the dough is 0.5/1 cm thick, use a cookie cutter to cut out your cookies. You could alternatively use a glass and a knife to cut them out. Take away extra scraps to re-roll for more cookies. Place them on a non-stick baking sheet and bake at 180C for 12 minutes.
