Feeling fancy tonight? Maybe you should try these Duchess potatoes! Even though the name might sound intimidating, Duchess potatoes are just schmancy mashed potatoes. The taste will remind you of your granny’s Sunday roast, but the shape will make you to feel royal (yes, we’ve been watching the fourth season of the crown in these days if you were wondering. Who hasn’t?).
I’m not really sure of the reason, but I’ve never been a mashed potatoes fan. It may be because of the texture or, most probably, because my mother used to make mashed potatoes using the powder mix. Nevertheless, I have to say I LOVE these duchess potatoes. Golden and crunchy on the outside, soft and creamy inside.
The very first time I ate these potatoes, however, I bought them frozen and just put them in the oven. I loved them so much I had to try making them from scratch. Even though it doesn’t look like, duchess potatoes are pretty easy to bake. Also, I got a Sac à Poche as a birthday present from a really goog friend of mine, and I had to try it out!
They go amazingly with the Cavolo Nero sauce, as the bitterness and spices oppose to the sweetness of the potatoes. I suggest you make some extra, freeze them down and have them always ready for whenever you need to feel fancy!

Duchess Potatoes with Cavolo Nero dip
Equipment
- pot
- sac a poche
- potato masher
- electric blender
Ingredients
- 400 gr White Potatoes
- 30 gr Butter
- 150 ml Milk
- 40 gr Parmigiano Reggiano
- 2 Egg Yolk
- to taste Nutmeg
- to taste Chives
- to taste Salt
- to taste Pepper
Cavolo Nero dip
- 4 leaves Cavolo Nero
- 30 gr Philadelphia any other spreadable cheese would work
- 1 tbsp Tahini Sauce
- as required Milk or Cream
- to taste Lemon Juice
- as required Salt
- to taste Chilli/ Tabasco
Instructions
- Boil potatoes in water with some salt. When cooked (usually it takes 30 min, but check with a fork to be sure), let them cool down for a bit and then peel them.
- Mash the potatoes and add butter, egg yolks, milk, parmigiano, shredded chives, salt, pepper and nutmeg and mix well. If the mixture results to be too dense, add a bit more milk.
- Put the mixture in the Sac A Poche and make the small duchess crowns. Once used all the potatoes dough, bake those in the oven at 200C for 15/20 min, until you see a golden crust.
- In the meantime, prepare the Cavolo Nero dip.
Cavolo nero dip
- Boil the Cavolo Nearo leaves for 10 min.
- Rinse the leaves and put them in an electric blender together with all the other dip ingredients. Add some milk or cream to make the dip more liquid or creamy.
- Once the potatoes are cooked in the oven, dip them in the Cavolo Nero sauce. So tasty!
