Do you love a tasty, crunchy, homemade cookie for breakfast? Me too! However, I find it always difficult to get a great vegan and gluten free cookie. Well, I just found out the best recipe EVER.
I am no vegan, or gluten intolerant. However, I love going for healthier versions and trying them out. I was amazed by those cookies. I made them last week and they were so great I had to make them again – like highly requested! It is so weird, as these are basically made out of oats and peanut butter. So wasy, quick and tasty.
I saw the recipe in my friend Chiara’s instagram page and I felt like I had to try them. Not disappointed. I just slightly modified the recipe, adding shredded coconut and dried apricots, so that I could use less sugar. Well. AMAZING. You should definitely try them out if – like me – you bought some oats ages ago and don’t really know how to enjoy them properly!

Peanut Butter Oats Cookies
Equipment
- Electric Blender (optional)
- Bowl
- Cookie cutter
- oven tray
Ingredients
- 130 gr Peanut Butter or any Dried Fruit Butter
- 130 gr Oats
- 40 gr Shredded Coconut
- 50 gr Dried Apricot
- 50 gr Dark Chocolate
- 30 gr Demerara Sugar
- 1 Egg Vegan Option: 100 gr Soy Yogurt
- 20 gr Vegetable Oil
- 1 pich Salt
- 1/2 tsp Baking Powder
Instructions
- Grind the chocolate (if you are not using chocolate drops) and the apricots.
- Mix all the ingredients together and warm up the oven at 180C.
- Shape the cookies in a lines baking tray, using a cookies cutter and a spoon. The mixture will b a bit sticku, but ir will solidify oce cookes.
- Bake for 15 min and let it cool before lifting and putting in a sealed jar. They will break if you lift them before cooled. Enjoy having breakfat!
