Healthy and quick breakfast? Try these overnight oats! You prepare them in the evening and they’ll be ready in the morning. And they taste amazing both straight from the fridge or warmed up in the microwave, during the cold winter mornigs.
Oats are a surprisingly common breakfast here in Scotland… I think I’ve tried it for the first time ever when attending a conference, at the hotel’s breakfast buffet. And I hated it! It took me a while before deciding to approach it again. But I just love it now that I’ve learnt how to properly prepare it!
You can really personalize these oats with anything: a different yogurt flavor, different fruit, different toppings. I used gingerbread yogurt, cooked apples and gingernut butter. The best part is that you can just change the toppings according to the season and your taste!
I decided to mix to it either some matcha powder, that I just adore, or some cocoa. You can really add anything to it, to make your perfect quick breakfast!

Fruity Overnight Oats
Equipment
- sauce pan
Ingredients
- 30 gr Oats
- 100 ml Milk Coconut for me
- 80 gr Yogurt
- 1/2 Apple
- 15 gr Peanut Butter (or Gingernut)
- 10 gr Honey or Agave
- to taste Cinnamon
- 6 gr Chia Seeds
- 5 gr Matcha or Cocoa Powder
Instructions
- In the evening, chop the apple and cook it in a sauce pan at medium heat for 10/15 min. Add Cinnamon to your taste
- Prepare the overnight oats. In a bowl, add oats, milk, yogurt and honey and mix well. add the Powder you like (Cocoa or Matcha or Other) and mix well again. Seal the bowl with some cling film and leave t in the fridge until the next morning.
- Add the apples on top, or any other topping you like, and enjoy. If you like it, warm it up!
