Who would have known savoiardi are that easy to make? These spongy, airy biscuits are just perfect with a coffee or cappuccino. You definitely have to try these.
Savoiardi are the traditional biscuits used for tiramisu. However, they’re so fluffy and tasty they’re perfect by themselves as well. It’s pretty easy to make these, as they require really few ingredients. Just separate the eggs white from the yolk and that’s it!
This was the very first time I made these by myself, and I can’t thank enough @Giulia which gave me the recipe. these are so much tastier than the store bought (which in Scotland are almost impossible to find). The only secret is to be delicate after whipping the whites. Enjoy!

Homemade Savoiardi aka Ladyfingers
Equipment
- whisk
- oven tray
- sac a poche
Ingredients
- 1 Large Egg (43 gr Eggs White, 23 gr Eggs Yolk)
- 30 gr Caster Sugar
- 1 Lemon Zest
- 1/2 Vanilla Beans (or 1/2 tsp of Vanilla Extract)
- 23 gr Plain Flour
- 10 gr Potato Starch or Corn Flour
- as required Extra Icing or Caster Sugar for dusting the Surface
Instructions
- Whip the eggs white, slowly adding the sugar (in 2-3 times) and the aromas.
- Add the slightly beaten egg yolk to the mixture. Add the powders mixing from bottom to top, trying not to un-whip the whites.
- Use a Sac-a-Poche to create the fingered-shaped cookies on a baking tray fitted with baking paper(or any shape you like), dust with either icing or caster sugar and cook at 170C for 15/20 min, until golden.
