I’m completely aware pumpkin season it’s unfortunately over. Here in Scotland, however, we can find Squash all year long, and I can’t help myself. These squash burgers are so quick, easy and tasty, you’ll run to get some pumpkin as well.
I used some frozen squash I had in the freezer, but you could definitely use fresh squash or pumpkin if you have some and follow the recipe as it is. As for the tofu, I suggest to use some firm tofu, otherwise the result would be mushy. The chickpea flour can be substituted by any other kind of flours, I’d suggest not plain, though.
I was so surprised when I made these. The result was amazing. They stick together and they’re crispy on the outside. These burgers are perfect when paired to some guacamole or hummus. The smaller sized burgers are great you could make bigger burgers and serve them on some buns. They really are effortless and mouth-watering. Perfect for a light, healthy weekly dinner.


Incredibly Luscious Pumpkin Tofu Mini Vegan Burger
Equipment
- sauce pan
- electric blender
- oven tray
- Bowl
Ingredients
- 400 gr Pumpkin, cut into squares I used frozen Butternut Squash
- 400 gr Firm Tofu
- 1/2 Red Onion, chopped
- 20 gr Chickpea Flour
- as required Breadcrumbs
- to taste Salt and Pepper
- to taste Turmeric
- as required Olive Oil
Instructions
- Warm up some olive oil on a sauce pan and cook the onion until browned. Add the pumpkin and cook it for 10-15 min, until tender, adding a tiny amount of water if too dry. Heat up the oven at 200C.
- Cut the Tofu into pieces and blend it with the pumpkin using an electric mixer or blender. Add salt, pepper, turmeric and the chickpea flour. Mix together and start shaping the burgers.
- Dust the burgers with breadcrumbs and place them on a baking tray. Spray some olive oil on top and bake for 20 min, until golden. Enjoy with some avocado spread.
