What’s more vintage than Shrimp Cocktail? That’s where I got the idea for this extraordinary dish. Don’t let the vertical shape fool you: it’s one of the easiest dish and appetizer ever.
I am pretty sure this used to be one of the most famous ever recipes in the 80s. I love the 80s fashion, with all those amazing and vibrant colours and the poufy hairstyle. I can’t say, however, I am fond of the 80s cuisine trends, with all those sauces and weird textures. As for today’s recipe, I decided to bring the cocktail shrimp to another level, with a modern shape but still keeping the historical flavour.

Let’s go Vintage: Shrimp Cocktail in a Shortcrust Pastry Ring
Equipment
- Bowl
- Pastry Rings (Round cookie cutters)
- Small pot with boiling water
Ingredients
For the Shortcrust Pastry (you will need only half for making 3 rings)
- 300 gr Flour
- 80 gr Olive Oil
- 120 gr Water
- 10 gr Salt
For the Filling
- 1 small Avocado
- 100 gr Shrimps
- 1/2 Lemon Juice
- to taste Salt and Pepper
- 2-3 Sage Flours
For the Cocktail Sauce
- 3 tbsp Mayonnaise
- 1-2 tbsp Ketchup
- 1 tsp Worcestershire Sauce
- 1 tsp Cognac Optional
Instructions
- Make the shortcrust pastry, by combining all the ingredients together and knead for 5-10 minutes, until smoot. Leave it to rest 30 min/ 1hour in the fridge. Roll it out to a 4mm tick sheet and cut out 3 cm thick strips. Roll the strips on the outside od a pastry ring and leave it to rest in the freezer for about 3 hours. Bake at 150C for about 30 minutes and let it cool.
- Prepare the cocktail sauce by mixing all the ingredients together ab=nd leave aside.
- Cook the shrimps in salted oiling water for about 5-10 minutes, let them cool and cut into pieces. Cut the avocado into cubes and mix it with salt, pepper and lemon juice.
- Start layering up the avocado, cocktail sauce and shrimps on the vertical ring. Decorate with some purple sage flours.
