Mango panna cotta is the perfect light dessert, full of fruit, freshness and sweetness! You can prepare it in advance, so that you’ll have some in the fridge for whenever you need a bit of sweetness during the day.
Mangoes have been my obsession since we’ve been to Thailand last year. In Thailand you can find women selling mangoes at every corner, and they’re just so tasty! Some of their typical desserts are mango sticky rice or mango pudding, which are just delicious. I’ve been feeling pretty nostalgic in this period, I miss travelling around the word and tasting all those amazing food. Also, the weather isn’t helping much. I can still feel the sun of those warm countries on my face and its warmth on my skin, but I can only see the grey and rainy Scottish sky when I stare at the window. Thus, I decided to bring a bit of Thai sun to this grey and rainy Scottish day.
Last week we managed to fly to Italy and see our family and friends. When we got back, I realized we had three mangoes in the fridge which just perfectly ripen. I usually have mango for breakfast, with some Greek yogurt, but I wanted to try making something different.
While making the cups, I decided to add some almonds on top, to add a bit of crunchiness, and some cardamom to the pannacotta for some of exotic taste. These can be modified accordingly to your taste. I bet these cups would be great with some cookies on top or some chocolate pannacotta as well (just add 10gr of cocoa powder while warming up the milk!).

Mango Panna Cotta
Equipment
- electric blender
- small pot
- cups or glasses
Ingredients
- 150 ml Unsweetened Almond Milk or any other Milk
- 100 gr Greek Yogurt
- 4 gr Agar Agar or 5 gr Gelatin or 20 gr Potato Starch
- 35 gr Sugar (Brown, Demerara, Xylitol, Stevia)
- 350 gr Mango
- 20 gr Almonds
- to taste Cardamom
Instructions
- Pour milk and sugar in a sauce pan and warm it up. Once the sugar dissolves, add the Agar Agar and mix for 4/5 min.
- Cut mango into pieces and blend half of it with an electric blender.
- Add milk, yogurt and cardamom to the mango and mix well. This will be the bottom layer of the mango cup, the panna cotta. At this stage, the panna cotta should still be quite liquid.
- Start filling up the cups: pour a layer of pannacotta in each glass and wait for 10-15 min until it solidifies.
- Add the layer with the mango pieces and some crushed almonds.and put cups in the fridge for at least 1-2hs.
- Enjoy whenever you prefer!
