They are crispy on the outside, creamy on the inside, and addictive. These Peas and Ricotta Croquettes are so tasty, they’ll please anyone. I believe I am croquettes’ fan number 1.
Not perfect pictures, but I’m not used to natural light.. and I was starving! I love croquettes. They’re so versatile. So irresistible. They can be filled with anything: cheese, potatoes, ham, mince, vegetables. The only rule is that they must be coated in breadcrumbs. You never get tired of eating them. They’re as simple to make as easy to mess up. They might get too hard, or mushy… Well, it’s something you’ll avoid for sure, following this recipe.
My version features peas and ricotta, breaded with panko and oven cooked. I bet you can fry them, but I usually avoid frying, as my tiny kitchen opens up in the living room. Dip them on your favourite sauce, and they’ll be perfect with a cold beer.

Peas and Ricotta Croquettes
Equipment
- frying pan
- electric blender
- oven tray
- Bowl
Ingredients
- 300 gr Peas
- 250 gr Ricotta
- 1 Egg
- 30 gr Grated Parmesan
- 40 gr Panko Breadcrumbs + extra for coating
- to taste Rosemary
- to taste Salt and Pepper
- as required Olive Oil
Instructions
- Drain the ricotta for half an hour. Heat up some olive oil on a frying pan and cook the peas until tender (about 10 min). Season with salt, pepper and rosemary. Blend in a mixer when cooked.
- Heat up the oven at 200C. Add ricotta, peas mixture, egg, parmesan and panko in a bowl and mix. The mixture will result a bit sticky, wet your hands a bit and start making the croquettes. Coat each croquette with panko and place in a baking tray.
- Spray some olive oil on top and cook for about 20 min, until golden. Enjoy warm or cold!
