If you ever ended up with loads of potatoes to use and got tired of mashed potatoes, this recipe will fix you up. This roll is crunchy, cheesy and delish. Just the perfect comfort food.
This roll is a great idea for a different and tasty side dish. It is also pretty easy to make, once you boil the potatoes and cook the squash. You could use any kind of filling and it always comes out toothsome. It is great if you don’t have many ingredients in your fridge, as you could just boil some potatoes and combine them with anything you have.
The only thing to keep in mind: dust the baking paper really well, otherwise you won’t be able to roll out the dough. Beside that, this recipe is so great, I’ll leave you to that!

Potatoes and Squash Cheesy Roll
Equipment
- pot
- baking tray
Ingredients
- 400 gr Potatoes
- 200 gr Squash
- 50 gr Grated Parmesan
- 30 gr Flour
- 1 Egg
- 200 gr Radicchio or Spinach
- 100 gr Caciotta or any melting Cheese
- as required Breadcrumbs
- as required Olive Oil
- to taste Salt, Pepper and Rosemary
Instructions
- Boil the potatoes with their own skin until tender (it should take 15/30 min depending on the size). Cut the squash into pieces and cook it in a sauce pan with a tiny bit of oil, adding some water when it dries out, until tender.
- Wait for the potatoes to cool down. Peel the potatoes and mash them with the squash. Add flour, parmesan and the egg.
- Dust some breadcrumbs on a baking sheet and spread the mixture in a rectangular shape. The breadcrumbs layer needs to be quite tick, otherwise the mixture would stick to the baking sheet. Cook some or spinach leaves.
- Add the cooked leaves on top of the rectangle and layer it with the cheese. Roll the rectangle really tight with the baking sheet and put it in the oven. Cook for 20 min at 180C, then remove the baking sheet and cook for another 10 min to create the crust. Leave it to rest for 5-10 min and then enjoy!
