Here we go with an unusual gnocchi recipe. As soon as I saw the recipe my sweet friend Chiara posted, I knew I had to try it! These Squid and Fresh Tomatoes Sauce goes so well with spinach gnocchi, I won’t make them anymore with just butter and sage.
I decided to adapt the recipe slightly. My spinach gnocchi are a bit different than hers. Also, I couldn’t find dried tomatoes, so I only used fresh ones. But I think they’d better be substituted by either olives or anchovies.
The texture and flavour of this dish is just amazing. As for the gnocchi, I used my spinach gnocchi recipe. If you make the gnocchi in advance or you use some store-bought one, this amazing dinner only takes 30 min. The chilli flakes on top are optional , of curse, but I just love hot pasta dishes. Homemade Spinach Gnocchi with Squid and Fresh Tomatoes
Equipment
- sauce pan
- Pot with Salted Boiling Water
Ingredients
- Spinach and Potatoes Gnocchi check out the Recipe on the Blog
- 300 gr Squid fresh or frozen
- 100 gr Cherry Tomatoes
- 1/2 Onion
- 1/2 glass White Wine optional
- 1/2 Lemon Juice use the entire lemon if not using the wine
- as required Olive Oil
- to taste Salt
- to taste Hot Chili Flakes
- to taste Dried Tomatoes or Olives or Anchovies
Instructions
- Prepare the gnocchi as described in my post (but normal gnocchi will work as well).
- Warm up a tbps of olive oil in a frying pan, then add the onion, cutted into small pieces. In the meantime, cut the squid into rings.
- When the onion browned, add the squid. After a couple of minutes add the wine and the lemon juice and let these evaporate. Put a lid on the pan and let it cook at low-medium heat for 20 min.
- Cut the cherry tomatoes and add them to the pan. If you decided to use either dried tomatoes, olives or anchovies, add those as well. Add salt in case you're not using any of these ingredients. Cook for 5 min with the lid on.
- In the meantime, cook the gnocchi in salted boiling water. They'll be ready once they come to surface. Don't cook too many at the time, as they'd stick together otherwise. Leave the cooked gnocchi on a pasta drain while you cook all of them.
- Add the gnocchi to the sauce and stir. Serve with Chilli Flakes on top, if desired.
