Have you ever wondered how strawberries can feel into the wood? This is how I imagined it. This strawberries tortelloni, filled with taleggio, strawberries and almond, on a peas and mint bed, paired with some fresh oranges juice and spiced up by some paprika.
I won’t lie saying this is an easy preparation. It takes time to prepare all the characters of this pasta poem. However, taking your time and following some easy steps, you will have this amazing dish in front of you. And believe me, it’s a very tasty reward!

Strawberry Tortelloni in the Wood
Equipment
- immersion blender
- Electric Mixer
- sauce pan
- frying pan
- Pot with Salted Boiling Water
- Pasta Maker (optional)
- Syringe without Needle
- Empty Bottle
Ingredients
For the Strawberries Tortelloni
- 100 gr Strong Bread Flour
- 90 gr Strawberries plus 50 gr for the filling
- 100 gr Taleggio
- 30 gr Almonds
- to taste Salt and Pepper
For the Peas and Mint Bed
- 100 gr Peas
- 4-5 Mint Leaves
- to taste Salt and Pepper
For the Oranges Caviar
- 100 gr Fresh Orange Juice
- 1 gr Agar Agar
- 1 Jar Cold Olive Oil
For the Paprika Coral
- 100 gr Water
- 30 gr Vegetable Oil
- 13 gr Flour
- 5 gr Smoked Paprika
Instructions
For Making the Pasta and the Filling
- Blend 90 gr of strawberries and mix with the flour. Knead on a floured surface and let it rest for 30 min.
- Prepare the filling by grinding the almonds, chopping the strawberries and the cheese and mixing all together. Season to taste with salt and pepper and let aside.
- Start rolling out the pasta into sheets for your tortelloni. The pasta should be really really thin. Pipe dots of your filling in intervals along the pasta. For the Peas and Mint Bed
- Cook the peas and the mint peas in a sauce pan, adding some water.
- When tender, blend the peas and leave aside.
For the Oranges Caviar
- Put a jar filled with oil in the freezer for about 10/15 min. The oil should be cold but not frozen.
- In a sauce pan, warm up the orange juice and dissolve di agar agar. Leave it boil for a couple of minutes. Pick up some of the liquid by using the syringe and pour it in the jar, drop after drop. Don't be too quick. it will solidify before getting to the bottom. Repeat until the vinegar finishes.
For the Paprika Coral
- Mix together in a bottle all the ingredients. Warm up a frying pan at medium heat.
- Shake the mixture well and pour into the pan, allowing to fry until the mixture resembles a coral texture. Gently remove and place on paper towel to drain the excess oil, and allow to cool.
Cooking the Tortellini and Serving
- Bring a large pan of lightly salted water to the boil and cook for 2–3 minutes before draining and tossing in olive oil (or butter).
- Serve the tortelloni with the peas and mint bed, some oranges caviar and the paprika coral. Enjoy, you deserve it all!
