Let’s go back to the basics with these amazing potato croquettes. These croquettes are an amazing, tasty appetizer. They’re baked, meaning they’re lighter than the original version. However, believe me when I say these are as great as the original version, if not even better.
Anyone of us bought frozen croquettes at least ones in their life. Iwould have never imagined how tasty the homemade version would be. Once you try it, you’ll never go back to the industrial ones, believe me!
You can either fry these or bake them. I usually prefer baking as our kitchen is quite small and the fried smell would go all around the house. I bet these would be even tastier when fried! Try them out and enjoy!

The Perfect Homemade Potato Croquettes
Equipment
- pot with boiling water
- Bowl
- oven tray
Ingredients
- 450 gr Potatoes
- 1 Egg
- 20 gr Grated Parmesan
- 50 gr Breadcrumbs
- to taste Salt and Pepper
For the Coating
- 2 Egg
- 50-60 gr Breadcrumbs
- to taste Paprika
- as required Olive Oil
Instructions
- Boil the potatoes until tender – about 20 min- I prefer to boil them with the peel as they absorb less water. Drain them, cool them with some cold water, peel and mash in a bowl.
- Add salt, pepper, the egg and the parmesan to the bowl. Mix everything together and shape the croquettes.
- Coat each croquette by dipping it in the egg and in the breadcrumbs (add paprika to the breadcrumbs if you like.
- Place them in a lined oven tray, spray with some oil and cook at 200C for 20 min. Enjoy warm, with the dipping sauce you prefer.
