If you are looking for a quick and not too heavy pastry cream to serve your Christmas pudding/cake with, this is exactly what you’re looking for. With just 4 ingredients, you could make this silky and creamy pastry cream in less than 10 minutes. I got the inspiration for this really tasty vegan recipe from La Regola del Piatto.
I used turmeric to give it a yellowish color, so that is really looks like pastry cream. As for the taste, it’s hard to say the difference with a regular pastry cream. It’s so sweet, delicious and light. I ate some of it just like that.
Now, how could you use it? It’s so versatile, you could really use it in so many different ways. The easiest one, of course, is to just eat it straight away. You could then use it as a garnish for your cakes. We love to have panettone with cream during Christmas or NYE, and this could be a really great lighter option. Last but not least, use it as a filling for your sweet pies! I’ll post soon a recipe for a great cream filled vegan pie!
Just a small tip: remove it from the heat just a bit before it reaches the desired consistency. By the time you let it cool down a little bit, it will reach the perfect consistency.

Vegan Pastry Cream
Equipment
- sauce pan
Ingredients
- 250 ml Soya Milk or any Milk (add less Sugar if sweetened)
- 20 gr Corn or Potato Starch or 30 gr Plain Flour
- 2 tbsp Coconut Sugar or any other Sugar/Sweetener
- 1 Lemon Zest
- 1/2 tsp Turmeric (to make it Yellow)
Instructions
- Place the starch and the sugar in a sauce pan and slowly pout the milk, two spoons at the time, mixing well allowing the starch to melt completely. Don't do the opposite or add the milk all together otherwise you'll end up with lumps.
- Warm up the mixture, then add the lemon zest and the turmeric.
- Stir for about 5/10 min, until to get the desired consistency. Pour the mixture in a cup and serve either warm or cold.
