Not perfect, but cute enough. Have you ever tried to draw on your cookies? It’s so easy to make an home-made royal icing. And I have to say it’s a lot of fun realizing these decorations as well.
Over the weekend, I decided to bake some cookies with my Vegan Shortcrust Pastry and make them look cuter, for a change. It’s not as complicated as it looks like, believe me. I know, they’re not perfect, but I think they’re cute enough.
What you’ll need is just some icing sugar and a tiny bit of water. You could then use some edible coloring to easily get any color you like. I decided to use natural ones, though. There’s so much color in nature. I used butterfly pea flowers, matcha powder and instant coffee to get three different pastel colors for my decorations.
I strongly suggest to use a small sac-a-poche for decorating the cookies. However, as I didn’t have one, I used some thick transparent plastic bags. I made a small hole on one edge and filled it with the icing. It kind of workes, I have to say.
Small tip: add a teaspoon of water at the time and mix well, if you add too much water the resulting icing would be too liquid for use.

Vegan Royal Iced Cookies
Equipment

- Bowl
- baking tray
Ingredients
- 1 Shortcrust Pastry Look for the recipe of my delicious Vegan Pastry
- 200 gr Icing Sugar
- 1 tsp Butterfly Pea Flowers (Purple)
- 1 tsp Matcha Powder (Green)
- 1 tsp Instant Coffee (Brown)
- as required Water
Instructions
- Place the shortcrust pastry on a rolling mat, sprinkle with flour and roll out with a rolling pin. Move the dough around to prevent it from sticking.
- Once the dough is 0.5/1 cm thick, use a cookie cutter to cut out your cookies. You could alternatively use a glass and a knife to cut them out. Take away extra scraps to re-roll for more cookies. Place them on a non-stick baking sheet and bake at 180C for 12 minutes.
- Let the cookies cool down for about 20 min, and start preparing the icing. Leave the Butterfly Pea Flowers boiling in a tiny amount of water for about 10 min, until the water turns purple.
- Divide the Icing Sugar into 4 cups. Add some matcha powder in one of them and some instant coffee in another. To make the icing, start adding water a teaspoon at the time on each of the cups and mix well. For the purple color, add the purple water directly.
- Once the icing reaches a thick homogeneous consistency, fill the sac a poche and start decorating your cookies as you prefer! Leave it to rest for at least 2 hours and then enjoy!
