Who does not love nachos? and what the most annoying thing? Empty, limp nachos at the bottom of the bowl. Definitely. So well, this is the best recipe for perfect, quick, always tasty nachos. And they taste even better on the next day – if they get there.
This is another recipe I got inspired from an Italian friend. They were talking about these flawless nachos all the time when they came visiting. And complaining about the ones we were getting, of course. Well, once I tried it I have to day I had to agree with them. These are the perfection Nachos. They were usually making them with mincemeat, of course, but I gave them a try with baked beans and I wasn’t disappointed at all. Next time I’ll try with baked lentils. sure thing, the result will be amazing. I will keep you posted!

Vegetarian Nachos “Lasagne”
Equipment
- sauce pan
- baking tray
Ingredients
- 1 bag Nachos (200 gr)
- 1 can Beans
- 300 ml Passata
- 1 Onion
- 100/200 gr Grated Mozzarella
- 1-3 Spicy Peppers
- to taste Tabasco
- to taste Salt and Pepper
- as needed Olive Oil
For the Guacamole Sauce
- 1 big Avocado
- 1-3 Cherry Tomatoes
- 1/2 Lemon Juice
- to taste Salt and Pepper
- as required Olive Oil
Instructions
- Warm up some Olive oil in a sauce pan, cut the onion and cook it for about 5-10 minutes, until golden. Add the passata and cook for at least 10 minutes again. Add the beans and again cook and stir for 10 minutes. Season with salt, pepper and Tabasco.
- Warm up the oven at 180C. In a baking tray, make a layer of nachos, cover with some baked beans and mozzarella on top. Make another layer of nachos and repeat. Add the pepper on the top layer and bake for 15 minutes, until the mozzarella goldens.
- In the meantime, mash the avocado, add finely chopped tomatoes and the season and mix all together. Serve the nachos with the guac and a cold beer.
