Spices, nuts, and chocolate: sounds like an autumn dream, doesn’t it? These cookies have it all. They are just the perfect autumn snack and the quickest ever to make.
I am not sure whether my favorite food season is autumn or summer. To be fair, that’s kind of fair play. I love the spices smell, the brownish-orangey colours and the sweet pumpkin flavour autumn brings. I definitely transform and start wearing all orange and brown too. When the temperature isn’t that cold and the days aren’t that short yet, is just the perfect time for having walks, baking if raining, and enjoying the last days outside. Bring these cookies with you next time, you won’t regret it!

Walnut and Pistachio Spiced Autumn Biscuits
Equipment
- 1 Bowl
- 1 Rolling Pin
- Cookie cutters
- 2 Baking Trays
- 1 Sauce Pan for melting the Chocolate
Ingredients
- 220 gr Flour of Choice
- 65 gr Pistachio Flour grind the pistachios finely in case you can't find the flour
- 65 gr Walnut Flour grind walnuts finely in case you can't find the flour
- 1 Egg
- 40 ml Oil or Vegan Butter
- 1-2 tbsp Jogurt
- 80 gr Dark Sugar
- 10 gr Pumpkin or Mulled Wine Spices
- 1/2 tsp Vanilla Paste
- 1 tsp Baking Powder
For the Cocoa Dough
- 30 gr Cocoa Powder
For the Decoration
- 75 gr Dark Chocolate
- 4-5 Roughly Chopped Walnuts
Instructions
- Mix all the dough ingredients together, adding a splash of milk or water in case of the dough results in being too dry. Once all combined, divide the dough into two and add the cocoa powder on half of it. Knead well and let the dough rest for 20-25 min on the counter.
- Flour the working surface. Roll out the dough until 1.5-2 cm thick, cut out the cookies and bake on a baking tray at 180C for 15 min. Once cooked, let them chill for about 20 min, until completely cooled.
- For the decoration, melt the chocolate in a sauce pan, dip each cookie in it and let it rest on the baking tray. Before the chocolate solidifies, add the chopped nuts. Enjoy with a warm pumpkin spice latte or mulled wine!
