How big do you like your cookies? How crunchy do you like your cereal? I believe anyone bought Weetabix at least once in their life. Not everybody likes these cereals, though. Here is a quick, easy and tasty recipe to make everyone like them!
To be honest, I’m quite of a fan of Weetabix. I like to have them with yogurt, a splash of milk and fruit. I think using milk only makes them too squishy, while yogurt doesn’t moist the cereals enough. The combination of the two makes them just perfect for breakfast.
However, I know many people who just don’t like them. You’re going to change your mind when trying these. On a plus side, they’re amazing just by eaten by themselves as a snack! I had to make three batches in just a week. Perfect for using your Weetabix hidden in the cupboard!
When I was in the leverage buy-out business we bought Weetabix and we leveraged it up to make our return. You could say that anyone who was eating Weetabix was paying for our purchase of Weetabix. It was just business. It is the same for Liverpool.

Weetabix Cereal Cookies
Equipment
- Bowl
- oven tray
- Electric Blender (optional)
- Mini Cookies Cutter
Ingredients
- 4 Weetabix
- 140 gr Flour
- 70 gr Olive Oil
- 120 gr Yogurt
- 100 gr Coconut Sugar
- 20 gr Corn or Potato Starch
- 1 tsp Salt
- 1 Lemon Zest
- to taste Dried Fruit I used dried Apricots
- to taste Dark Chocolate, Grinded
Instructions
- Mix yogurt and corn starch, break the weetabix either by hand or with an electric blender and mix together. Add all the other ingredients. Grind the dried fruit or/and the dark chocolate and ad to the mixture.
- Once the dough is homogeneous, transfer to a floured surface. Add more flour in case the mixture results too sticky.
- Roll the dough out and cut the small cookies. Repeat with the dough leftovers, until you finish all the dough.
- Bake at 170C for 15 min. Enjoy in your morning yogurt or milk!
